New Appellation of Origin for Paprika

The Secretary of Agriculture, Livestock, and Fisheries—under the Ministry of Economy—issued Resolution 49/2025, published in the Official Gazette on April 14, 2025, recognizing paprika from the Calchaqui Valley in the Province of Salta as an Appellation of Origin (AO). The request for recognizing, registering, and protecting the AO was filed by the non-profit organization Asociacion Civil Abierta Consejo de la Denominacion de Origen (DO) del Pimenton del Valle Calchaqui de Salta.


The Resolution:

  • Grants the certification to use the AO.
  • Approves the logotype used to commercialize the products the AO covers.
  • Establishes the obligation to use the term “DENOMINACIÓN DE ORIGEN (DO) DEL PIMENTÓN DEL VALLE CALCHAQUI DE SALTA” on all the products the AO covers, following Resolution 546/2011 of the Secretary of Agriculture, Livestock, and Fisheries.
  • Establishes the obligation to use the logotypes in the Resolution to benefit from the refunds provided for AO products, following Decree 1341/2016 of the Ministry of Agroindustry.


The new AO covers paprika known for its mild, non-overpowering aroma of pure pepper. It features a red color with orange hues that remain vibrant even when diluted. These distinctive qualities result from a combination of natural, geographical, and human factors, rooted in a long-standing tradition of manual harvesting and artisanal sun drying.

The AO covers areas in the Municipalities of La Poima, Payogasta, Cachi, Seciantas, Molinos, Angastaco, San Carlos, Animana, and Cafayate, in the Calchaqui Valley in Salta. The map is available here.
